Rhubarb is a vegetable, but is treated more like a fruit in the kitchen. Victoria is one of the oldest rhubarb varieties on the market. It was introduced in 1837, at the start of Queen Victoria's reign, and is still in production today because of it's heavy, dependable yields and sweet, slightly tart flavour. The stalk is red, turning to green closer to the leaves. The leaves are toxic, but the stalks can be used for pies, as a second ingredient in jams, preserves or frozen. It can produce 1.8 to 5.4 kg per crown per year (after second year). Can tolerate some shade, but does best in full sun. Beautiful fall foliage colours.
