Jerusalem Artichoke, also known as sunchoke, is neither an artichoke, nor from Jerusalem. It is a prolific root vegetable similar to a potato. It has beautiful yellow flowers that appear on the stalks in the summer. (For bigger tubers, these should be pinched off.) It has a lower starch content so it is lower on the glycemic index. It is also high in inulin.
Plant in a container to prevent it from taking over your garden. Harvest in the fall before frost enters the ground. Tubers can be stored cool in damp peat moss for months for eating. Any tubers, or portions of tubers, left in the ground will produce more the following season.
Companions: corn, rhubarb (do not plant near potatoes)
